Sev Khamni (makes 1 meal)
Initialization
For main dish:
- 1 cup of Gram flour
- 1 Tbsp of flax seed meal
- 2 Tbsp of milk (makes it soft)
- 1 clove of garlic, finely chopped
- Jalapeno (or pepper) to taste, finely chopped
- Pinch of asafoetida
- 1 tsp of turmeric powder
- A pinch of red chili powder
- 1 tsp of citric acid (or lemon/lime juice)
- A pinch of basil, oregano and rosemary (or any other herbs you like)
- Salt to taste
- 1 tsp of baking soda/ fruit salt
- Cheese, grated or in pieces
For chutney:
- 1 Tbsp of date/tamarind chutney
- 1-2 Tbsp of coriander chutney
- 1 tsp of dry garlic chutney
For topping:
- Onion, finely chopped
- Coconut flakes
- Sev (Ratlami sev for spice-fans)
Algorithm
For main dish:
- Mix all the ingredients except last two in a microwave-safe bowl
- Gradually add water and whisk to obtain thick consistency, without lumps (don't worry if you added a bit more water)
- Add baking soda and whisk quickly to get fluffy consistency
- Add cheese on top, and microwave for about 5 minutes
- Final result should be non-sticky and solid to the core, but moist
For chutney:
- Mix everything together with roughly 3 Tbsp of water and pour it over the main dish
For topping:
- Sprinkle sane portions over the main dish
